A delicate and complex coffee with distinct notes of melon, and florals, perfectly tip-toeing between acidity and bitterness to achieve a sweet and incredibly balanced cup. Expect a coffee that tastes less like coffee and more like a caramelized tea / coffee hybrid that continues to evolve as the cup slowly cools.
Best served in a milk free environment to highlight its incredibly unique profile.

Grown and processed in Yiwu, one of the old tea mountains of Xishuangbanna in Yunnan, China, the province that grows nearly all of China's coffee. Roasted fresh in Brooklyn.
Rest: We recommend resting the beans for 2-4 weeks before brewing.
Espresso: Since espresso setups differ so wildly, we do not recommend a singular recipe for this bean. Instead, we offer the following guidance, assuming a regular, 9-bar setup.
Start with 19g in 45g out, following a wider 1:2.5 ratio rather than the traditional 1:2 espresso ratio. For timing, aim for between 24-26 seconds.
Filter: For pourover, aeropress, french press and Cold brew, we recommend using whatever recipe you have found success with as a starting point.
If you have traditionally used washed process coffees, we recommend you increase the grind size and decrease water temperature.
Dialing in: If its sour, try a finer grind size. If its bitter or drying, try coarser. If its too weak, use more coffee or less water.
We use UPS. You can expect shipping to take 4-5 business days at the longest.
